POE is definatally the easiest way to go, as you do not need to run any more wires than just the Ethernet cable. Most POE cameras allow you to use either POE, or an external power supply.

The great thing is, you can get POE hubs, so you can run a single Ethernet cable to a specific location, and then using the POE hub break out to several cameras from that spot saving you having to run several cables to cameras in a remote location.

I have 8 cameras, 2 are straight off of the recorder, 4 more are off a Hub up in the loft, one is on a wireless extender in the garage, but that camera is on it's own power supply as the extender does not support POE, and the last camera is a cheap little PTZ wireless camera.
